Food costs: what to expect
Expect to spend anywhere from $30 a day per person to $100 a day per person. this is dependent on how fancy you want your food to be. but either way lunch meals average $10 and dinner meals $30 for a nice restaurant. Ideally we will be getting half our meals "togo" to eat at the air bnb for a kid friendly feel. I'd only plan on eating on a select few nice places for date nights or large set meals that are sharable with the kids.

Plan A - 12 Days
Only plan with both EXPO and Hotsprings. The hot-springs are more for adults and may be too hot for children to enjoy, the air bnb here is extra kid friendly to offset the adults and kids wants evenly. I would recommend the hotsprings option if you do not plan on coming back to japan since it's a must try bucket list, but if you do plan on coming back then maybe wait till kids are older for best experience. More adult Air BNB with amazing views at a better price but No Hakone
Slower paced allows day to be dictated by kids need for rest when needed, still hits all the expected places to see and gives lots of time for exploring and chilling out. Most bang for your buck option for what you get because it still hits majority of highlights, there is No Expo day and it is a little more crowded schedule. This option is good if you think 12 days is too long to be away from work, but still want to try to see as much as you can. This plan will be a hit or miss in regards to how well the kids adjust to traveling at a faster pace. This is the cheapest possible option I could come up with that still gives everyone a good taste of what japan has to offer. The tokyo air bnb is muchhhhhh smaller than the other options and the schedule doesn’t really allow for much wiggle room. But its a great option if you can’t go for longer than a week. I will keep in mind it is a shorter time period so time zone changes can be harder for the kids in this short of a span. But it will be great regardless of the time trame. This is good if you just want to test the waters and come back again soon.
